Young business owners and agricultural producers Sophie and Nathen owned and operated an on-farm butchery on the Fleurieu Peninsula when they applied for support payments in 2014.
Nathen, a fourth generation farmer, completed smallgoods and charcuterie courses at the Victor Churchill cooking school in Sydney along with an advanced private butchery class to allow him to further his skill base in butchery as well as business management.
Sophie used her funding to complete French cookery, charcuterie and smallgoods training at Victor Churchill with the intention to develop a more diverse product line to support their sustainable whole animal butchery philosophy.
