Wayne had worked in Dairy manufacture all his life and been mainly involved with large scale cheese production when he applied in 2009.
At that time he had worked with smaller cheesemakers and it become apparent to Wayne that there was a skills gap in relation to Affinage (maturation of cheese). Funding was provided to allow him to travel to Vermont Institute of Artisan Cheese and complete two training courses. He returned to South Australia with increased skills and was able to assist many of our artisan cheese makers.
